This is one of the most exciting Champagne houses around at the moment, producing fabulous, intense and pure charactered Champagnes that really speak of the people who make them and the area they are from. They are a million miles away from the Grande Marques in style, quality and attitude.
Francoise owns 8 hectares in and around Crouttes sur Marne. All the vineayrds have been farmed biodynamically since 1998. The vineyards are planted predominantly with Pinot Meunier (78%) with the balance made up of Chardonnay (13%) and Pinot Noir (9%). The Pinot Meunier thrives in this region and gives the wines wonderful texture and hints of strawberries.
The wines are fermented and aged in a combination of enammelled tanks and oak barrels. All the wines spend between 6 and 7 years on their lees before disgorging to develop suppleness and complexity. This long ageing means the wines do not need high additions of sugar (dosage) at bottling.
Entre Ciel et Terre is a Blanc de Noirs Champagne made from 80% Pinot Meunier and 20% Pinot Noir grown on calcareous clay soils. A wine with a wonderfully tight bead of bubbles, it opens with subtle acacia, honey and spiced-bread aromas; the palate is initially crisp, opening to a spicy richness and finishing with lingering citrus fruit notes.
