Vini Fabiano Valpolicello Classico Superiore Ripasso 2011
The wine is made following the ancient traditional method of double fermentation: at the beginning of March the Valpolicella Classico Superiore goes through a second fermentation over the pressed but still rich skins of the Recioto and Amarone. During this phase the fruity and flowery notes of the basic wine are enriched with the structure and aroma of the withered grapes. After this second fermentation, the wine is aged in small Slavony oak barrels for 12 months. The winemaking process is then completed after a period of 3 months maturation in bottle. The colour is dark ruby red, intense and elegant on the nose with hints of ripe cherry and black raspberry. Light hints of spices from the long ageing in oak barrels. Full bodied in the mouth and a long finish with a well balanced acidity, soft tannins and a perception of fleshy fruits. Delicious with roasted meats and mature cheeses.
